Inventory is arithmetic plus honesty. Opening + receipts − sales ± explained adjustments should match a physical count often enough that surprises are investigated.
Name items and units once
“Oil” is not an item if you sell both 1-litre bottles and loose kilos. Pick one name and one unit per line you will count.
Count the fast movers
Daily for the handful of items that pay the rent. Weekly for the rest. A full annual stock-take without daily checks is how differences become unexplainable.
Never silent-fix the number
If the shelf is short, write why you think so (theft, unrecorded sale, unit mix-up, damage) before changing the book. Otherwise the next count will lie too.
